Extra virgin olive oil
The production of olive oil is a tradition in our family. We continue to cultivate olive trees for generations, according to ancient environmentally friendly methods.
The varieties of olives in our olive grove are the most characteristic and representative of the Istrian territory.
The harvest begins in late October or early November when the stage of ripeness of the olives is optimal and we have the maximum amount of lipid, phenolic and volatile constituents.
To ensure the highest oil quality, we collect only olives that are still on the trees leaving on the ground the fallen ones in order to prevent the alternation of the organoleptic proprieties.
The oil obtained following these procedures is deep green and characterized by a spicy note.
